These restaurants offer the usual Brazilian barbecue - churrasco, which is made of whole cuts of meat which are skewed and barbecued in a “churrasqueira” made of bricks. The meat is barbecued and then brought to the table, in a service called a rodízio.
Passadores (meat waiters) wander around the establishment, each handling a specific type of meat. They come to your table with a skewer and each one can then either elect to take a slice of the food or pass. For the inexperienced it can become quite an staggering experience as skewer upon skewer is provided to the table.
