Passadores (meat waiters) walk around the restaurant, each person carrying a specific type of meat. They come to your table with a skewer and each individual can then either elect to take a slice of the food or pass. For the inexperienced it can become quite an overwhelming experience as skewer upon skewer is provided to the table.
Many kinds of meat are brought around, normally various cuts of beef, pork, lamb, chicken, duck, seafood, sausage, or any other local types of meats. Be sure to checkout the barbecued pineapple with cinnamon and sugar!
The “churrascarias” normally offer, complimentary to the meat, an all-you-can-eat buffet. Typically, the buffet serves salads, rice, beans, and some fish stew. Often, these restaurants also offer pao-de-queijo (similar to biscuit, but with a cheese infused bread. The bread is made of tapioca flour and cheese), and deep fried banana (typical Brazilian treats). Usually they offer Brazilian desserts, such as pudim de leite (milk pudding), passion fruit mousse, quindim (a sweet treat made of egg yolk, sugar, and coconut), and brigadeiro (made of chocolate, condensed milk, eggs, and sugar). It is absolutely worth saving room for dessert, if you can!
