These restaurants offer the traditional Brazilian barbecue - churrasco, which is made of whole cuts of meat that are skewed and barbecued in a “churrasqueira” built of bricks. The meat is cooked and then served at the table, in a service called a rodízio.
Passadores (meat waiters) roam the establishment, each person handling a specific type of meat. They arrive at your table with a skewer and each individual can then either choose to take some of the food or pass.
