Northeast Brazilian The Northeast area of Brazil, chiefly the states of Alagoas, Bahia, Ceará, Maranhão, Paraíba, Pernambuco, Piauí, Rio Grande do Norte, and Sergipe, comprises geographically of a thin, blooming coastal plain with ample rainfall in which much of the population is encountered, an equivalently narrow transition zone called the Agreste, and a sizable semi-arid region called the Sertão, which is influenced by significant cattle ranches. The key staple is a dish of white rice and black beans yet other popular meals comprise of farofa, paçoca, canjica, pamonha and quibebe. In the rest of the coastal plains there is less African affect on the food, yet seafood, shellfish, coconut and tropical fruit are menu staples. Frequently consumed tropical fruits in the North-eastern region include mango, papaya, guava, orange, passion fruit, pineapple, sweet sop, "hog-plum," sour sop, and cashew (both the fruit and the nut). In general, however, most northeastern states shall utilize tapioca flour and sun-dried beef (carne de sol). Shrimp and fish are also very popular and low-priced. Another attribute of northeastern food is the quantity. Often, the portions are quite generous, and a dish can suit two to three people. Several of the preferred from this cuisine are “moqueca de peixe”, acaraje’, vatapa’, tapioca com coco e leite condensado, cashew juice, acerola juice, acai.
