Northeast Brazilian The Northeast area of Brazil, predominantly the states of Alagoas, Bahia, Ceará, Maranhão, Paraíba, Pernambuco, Piauí, Rio Grande do Norte, and Sergipe, contains geographically of a slender, bursting coastal plain with plentiful rainfall in which much of the population is established, an likewise narrow transition zone titled the Agreste, and a significant semi-arid area named the Sertão, which is dominated by significant cattle ranches. All kinds of tropical produce are grown on the coastal plain, with sugarcane and cacao being mainly ample. Throughout the State of Bahia the principal cuisine is Afro-Bahian, which evolved from plantation cooks improvising on African, Amerindian, and standard Portuguese dinners employing regionally attainable ingredients. Typical dinners consist of vatapá, moqueca (both having seafood and palm oil), and acarajé (a salted muffin composed of white beans, onion and fried in palm oil (dendê) which is stuffed with dried shrimp, red pepper and caruru (mashed okra with ground cashew nut, smoked shrimp, onion, pepper and garlic). The primary staple is a dish of white rice and black beans although other widespread foods consist of farofa, paçoca, canjica, pamonha and quibebe. In the rest of the coastal plains there is less African impact on the food, but seafood, shellfish, coconut and tropical fruit are menu staples. Commonly eaten tropical fruits in the North-eastern region consist of mango, papaya, guava, orange, passion fruit, pineapple, sweet sop, "hog-plum," sour sop, and cashew (both the fruit and the nut). All of these states have their variants in cuisine and type, being Bahia one of the most typical of them. In fact, Bahia is the only Brazilian state in which the food is spicy, and restaurants will ask you if you want your meal “hot” or “cold”, meaning “spicy hot” or not. They use a good deal of “pimenta” (pepper) and azeite de dende (a particular kind of oil) to cook their meals. Overall, however, most northeastern states will use tapioca flour and sun-dried beef (carne de sol). Shrimp and fish are also really prominent and low-priced. Another feature of northeastern food is the amount. Generally, the portions are pretty large, and a dish can supply two to three people. Several of the favorites from this cuisine are “moqueca de peixe”, acaraje’, vatapa’, tapioca com coco e leite condensado, cashew juice, acerola juice, acai.

Restaurants in Brazil are frequently designed to handle lunch time guests rather than the typical dinner time guests. This greatly changes how they prepare foods, and how they price their food. Many lunch time diners are looking for a very simple eating experience, with a healthy and fairly quick meal. Hot buffets offer them this by having various hot dishes ready. Pricing is generally by weight or an all-you-can-eat model, many places have both options available. Sandwiches are regarded as a snack and not a proper meal! Therefore restaurants normally serve up hot and nutritious dishes for lunch rather than the typical North American light style lunches. Meals are generally served and eaten on premises, but many establishments also offer take away and food delivery services. Of course the dinning establishments vary widely in appearance and offerings, including a wide variety of dishes. For Brazilians it is very common to go back home during lunch to have their meal with their family members. This isn’t always practical, especially in the larger metropolitan areas, so restaurants have seized up this opportunity and designed a business model around catering to these people. In many of the considerably smaller cities it can be challenging to find a standard sit down and order off the menu style restaurant.

Some of the services offerred, include Cardápio para Crianças.
