These restaurants offer the traditional Brazilian barbecue - churrasco, which comprises of whole cuts of meat which are skewed and barbecued in a “churrasqueira” constructed of bricks. The meat is cooked and then brought to the table, in a service called a rodízio.
Passadores (meat waiters) roam around the establishment, each person handling a specific cut of meat. They arrive at your table with a skewer and every person can then either decide to take a slice of the food or pass. For the inexperienced it can become quite an overwhelming experience as skewer upon skewer is provided to the table.
Various kinds of meat are brought around, typically various cuts of beef, pork, lamb, chicken, duck, seafood, sausage, or any other local types of meats. Make sure to try the barbecued pineapple with cinnamon and sugar!
The “churrascarias” normally supply, complimentary to the meat, an all-you-can-eat buffet. Usually, the buffet serves salads, rice, beans, and some fish stew. Often, these restaurants also offer pao-de-queijo (similar to biscuit, but with a cheese infused bread. The bread is made of tapioca flour and cheese), and deep fried banana (typical Brazilian treats). They also offer Brazilian desserts, such as pudim de leite (milk pudding), passion fruit mousse, quindim (a sweet treat made of egg yolk, sugar, and coconut), and brigadeiro (made of chocolate, condensed milk, eggs, and sugar). It is certainly worth saving room for dessert, if you can!
Restaurants in Brazil are generally setup to handle lunch time diners rather than the typical dinner time diners. This significantly changes how they serve meals, and how they price their dishes. Many lunch time diners are looking for a fairly relaxed dining experience, with a hearty and relatively quick meal. Hot buffets offer them this by having many hot dishes ready. Pricing is frequently by weight or an all-you-can-eat model, most places have both options available.
Sandwiches are thought of as a snack and not a proper meal! Therefore restaurants typically serve up hot and healthy dishes for lunch in lieu of the typical North American light style lunches.
