Engenhos de rapadura

Much of the northeastern sugar cane crop becomes molasses in Ceará mills. Fortaleza stands out in the production of cane sugar, including several growers. Most of the Ypióca cane suppliers for instance,  rum distillery in the state of Ceará. There, the activity attracts thousands of tourists interested to know the process. 

In Pindoretama, a municipality 40 km from Fortaleza, the sugar cane mills (engenhos de rapadura) and its manufacturing of brown sugar, give tourists an awesome opportunity to know the process which represents a cultural heritage of Ceará and Brazil. The cane is crushed and fired. When it reaches the right point, honey goes to another boiler for 45 minutes, depending on the furnace. Then just put the candy in the form and let cool.

During the tour, the guides tell the a little story of brown sugar.  After visiting the mill, the tourists take the brown sugar home. Thus, the typical northeast taste goes hitchhiking through distant places.  

In the mill, which is on the roadside are a thousand brown sugar produced per day. The entire structure was made to meet the most demanding customers as well as meet the curiosity to know the production of brown sugar by tourists and visitors in general. By day, an average of 500 people visit the mill.

Dozens of sugar mills can be mostly found alongside the CE-040 road which gives access to the beaches of the east coast. Six of them are concentrated within 37 km, as the St. Louis, opened 25 years ago. Just pull the car to follow the sugar candy production process, made with cane. The brown sugar sold in more than ten flavors such as peanut, coconut, ginger, cashew nuts and cinnamon.
